05 - 1 teaspoon sea salt
06 - 1/2 teaspoon freshly ground black pepper
07 - 1 tablespoon fresh lemon juice, optional
# Directions:
01 - Set oven to 400°F and line a large baking sheet with parchment paper.
02 - In a large mixing bowl, whisk together olive oil, honey, fresh thyme, sea salt, and black pepper until fully emulsified.
03 - Add carrots to the bowl and toss thoroughly to ensure even coating with glaze.
04 - Spread glazed carrots in a single layer on the prepared baking sheet.
05 - Roast in the preheated oven for 25 to 30 minutes, turning carrots once halfway through, until tender and lightly caramelized.
06 - Remove carrots from oven, drizzle with fresh lemon juice if desired, and garnish with additional thyme. Serve warm.
