A bright blend of strawberries, basil, and lemon creating a cool, revitalizing summer beverage.

# What You Need:

→ Fruits

01 - 2 cups fresh strawberries, hulled and sliced
02 - 1 cup freshly squeezed lemon juice, approximately 4 to 5 lemons

→ Sweetener

03 - 1/3 cup honey or agave syrup, adjust to taste

06 - 1 cup club soda or sparkling water, optional for carbonation
07 - Ice cubes as needed

# Directions:

01 - Combine strawberries, basil leaves, lemon juice, and honey or agave in a blender. Blend until smooth consistency is achieved.
02 - Pour the blended mixture through a fine-mesh sieve into a large pitcher, pressing gently to remove pulp and seeds while retaining liquid.
03 - Pour cold water into the pitcher with strained mixture and stir thoroughly to combine.
04 - Taste the mixture and adjust sweetness by adding additional honey or agave syrup, or increase acidity with more lemon juice as desired.
05 - Add ice cubes to the pitcher and pour in club soda or sparkling water immediately before serving for optimal carbonation.
06 - Pour mocktail into individual glasses and garnish each serving with fresh basil leaves and sliced strawberries.

# Expert Tips:

01 -
  • It tastes like summer in a glass without any of the heaviness of typical sugary drinks.
  • The basil adds a sophisticated herbal note that guests always comment on, thinking you've done something far more complicated than you actually have.
  • Ready in 15 minutes, making it perfect for last-minute gatherings or when you need something impressive without stress.
02 -
  • If you skip straining and serve it unstrained, you'll end up with something that separates and looks unappetizing within an hour; the few extra minutes of straining is worth it.
  • The basil flavor intensifies as the pitcher sits, which is wonderful if you're making this ahead, but means you might want to taste it before serving and add a little more cold water if it's become too herbaceous.
03 -
  • Chill your pitcher and glasses beforehand so the drink stays cold longer without needing excessive ice that will water it down.
  • Fresh basil bruises easily, so add it to the blender last and pulse gently rather than running the blender at high speed for too long, which can make it taste bitter.
