Butter your bread:
Spread softened butter on one side of each bread slice making sure to get all the way to the edges for even golden browning
Build the base:
Place bread buttered side down on your work surface and if using mustard spread it on the unbuttered side of two slices
Layer the cheese and apples:
Arrange half the Gouda on the mustard covered slices then fan apple slices over the cheese before topping with remaining Gouda and a crack of black pepper
Close and cook:
Top with remaining bread buttered side out then cook in a skillet over medium low heat for 3 to 4 minutes per side until golden brown and the cheese has completely melted
